How to Creatively Use Stencils with Cakes, Confections and More These stencils can be used with royal icing, fondant, butter-cream, chocolate or any spreadable material. They can be used on top of any cake surface that isn't wet. For butter-cream, make sure the surface has a dry skin or is chilled in the refrigerator and is not tacky or sticky. The best surfaces are rolled fondant, royal icing and pastilage. Stencils can also be used for decorations on petit fours, cookies, mints, chocolates and other confectionery items. When baking bread, use a stencil to brush on an egg wash or glaze before baking, or use as a pattern for seeds, grains or dusting powder. There are 3 types of stencils: 1. Contact Stencils These are for stenciling directly on the top and sides of the iced cake surface. Lay the stencil over the top of the cake and hold in place. Smooth a small amount of icing over the openings. Genrly pull-off stencil. Clean stencil and let icing dry. To colour, align the clean, dry stencil over the embossed icing and hold in place. Use an air brush, colour spray or dusting sugar to apply colours. 2. Three Dimensional Stencils These stencils are for quickly creating multiple petals, swans, leaves, hearts etc, to be used when dry in a 3-D application. Lay the stencil flat on top of waxed paper. Spread a thick layer of royal icing over the openings, making sure that the icing is smooth and even. Left stencil. Gently shake the waxed paper back and forth to smooth the edges of the shapes. To create a curved piece, lay the waxed paper over an overturned Wilton Flower Former Item #706. Let dry, use piped royal icing to "glue" pieces together, if required. Pipe a flower center to butterfly body on the cake and stick in petals / wings. Let dry. 3. Masking Stencils These stencils are cut out of 30 mil polystyrene. This type of stencil can be used as a masking material on breads and cakes. Use with various decorative materials that can be sprinkled or dusted over the stencil such as cocoa powder and powdered sugar on cakes or flour, grains and seeds on breads.
Care of Stencils Hand wash stencil with mild liquid soap. Hang dry.
